Vegemite, a concentrated yeast extract, is a well-known Australian culinary specialty. Originally, it was a by-product of the beer brewing process. This sticky, salty spread has been a staple in Australian breakfasts for a century.
Despite its popularity, Vegemite is banned in Victoria’s prisons. Reports suggest it can be misused to distract dogs or brew alcohol. This has led a convict to sue the state of Victoria, claiming a breach of his human rights. The case is currently before the state’s Supreme Court, awaiting a decision.
Vegemite’s association with Australia is strong. Its intense salty taste generates debate on how thickly it should be applied to toast. Cyril Callister, a food scientist, developed Vegemite in Melbourne after World War I when Marmite stocks dwindled. Jamie Callister, the inventor’s grandson, explains, “First-time users should be cautious with their spread. Too much might not be pleasant.”
For Jamie, Vegemite evokes personal memories of childhood meals. He recalls, “Much to mom’s horror, dad would always apply Vegemite to his food, as others use tomato sauce. It was the go-to product.”
In the 1950s, a TV jingle propelled Vegemite into many Australian homes. Today, chefs are experimenting with it in pasta and curry dishes. Kiamba Briscoe, a bartender in Melbourne, uses Vegemite to craft a unique cocktail. She describes her process: “I reduce chardonnay until most alcohol evaporates, then I mix in Vegemite until it melts into the mixture.”
Briscoe combines butter and other ingredients to concoct a cocktail reminiscent of a dirty martini. She notes, “It tastes like Vegemite with butter on toast. The drink offers Vegemite’s signature yeasty tang.” While intriguing, this cocktail is not expected to be offered in Australian prisons soon.
