Florida Hospital Leads in Healthy Food Initiative

In a groundbreaking move, Tampa General Hospital has set a national precedent by becoming the first hospital in the United States to pledge a commitment to healthier, minimally processed meals for patients. John Couris, the hospital’s CEO, signed the ‘Make Hospital Food Healthier’ pledge at a news conference featuring key figures such as Health and Human Services Secretary Robert F. Kennedy Jr., USDA Secretary Brooke Rollins, and renowned chef Geoffrey Zakarian.

The agreement signifies a partnership aimed at significantly improving patient meals under the ethos of ‘food is medicine.’ Over the past year, the hospital collaborated with Zakarian to redesign its menu, focusing on nutritious offerings that aid in the prevention and management of illnesses. The 2025 announcement highlighted the importance of these improved meal options.

Kennedy offered insights during the event by addressing a common perception about hospital food’s lack of quality, underscoring that hospitals should offer nourishment conducive to health, not exacerbate ailments.

Couris voiced the hospital’s dedication to enhancing food quality, emphasizing that the collaboration with Zakarian had spiked food purchasing costs by 5% to 7%, a manageable expense.

“We doubled down on the quality of the food,” stated Couris.

Following the adjustment in menu options, the hospital witnessed a notable 53% boost in perceived food quality, alongside an increase in the number of patients completing their meals, as covered by Fox 13 Tampa Bay.

Kennedy and Rollins sampled a newly designed menu featuring options like soup, mezze salad, and steak crafted by the hospital’s culinary team, further establishing the hospital’s commitment to healthy eating.

The ‘Make Hospital Food Healthier’ initiative from HHS and the Centers for Medicare & Medicaid Services launched recently, urging hospitals nationwide to embrace healthier food standards. Hospitals must now adhere to the new Dietary Guidelines for Americans to continue receiving Medicaid and Medicare payments.

Kennedy highlighted Tampa General as an exemplar, pointing out their strategy of sourcing approximately 25% of food locally, setting a clear model for other institutions.

“We have a template here at Tampa General,” said Kennedy. “We can say if they did it, you can do it.”
