Soul & Smoke’s Flagship to Open in Evanston, Merging Southern Roots and Modern Cuisine

Soul & Smoke, acclaimed for its American soul food and barbecue, will debut its flagship location in Evanston. The grand opening, set for September 1, promises a unique fusion of Southern roots and molecular gastronomy. Chef D’Andre Carter, alongside sommelier Heather Bublick, launched their business as a catering company in 2020. It has since expanded to four locations across Chicago, including a stand at Soldier Field. This Evanston location is their first full-service restaurant, offering all-day familiar favorites and fine dining at dinner.

A New Dining Experience

The redesigned restaurant will feature two distinct menus. During the day, customers can enjoy classics, while evenings will offer a fine dining experience. Chef Carter is keen on merging fine dining with traditional barbecue and soul food. His upbringing on Chicago-style smoked rib tips and spicy hot links influences his cooking, using heritage Duroc pork for the restaurant’s variations.

We want it to be a place where customers enjoying a rib tip combo can sit alongside those having a full dinner with oysters and steak, said Carter.

The restaurant’s concept is a dream for Carter, reflecting a modern barbecue style with family recipes. It was delayed due to various challenges, including code changes and increased costs. The owners originally moved into a century-old barn in 2016, which they later bought in early 2020. The pandemic led to unexpected business growth as they pivoted their plans.

Innovative Menu Offerings

One standout dish on the menu is an oxtail cigar, a tribute to mentor Chef Homaro Cantu. This dish, resembling a cigar, consists of hickory smoked beef oxtail wrapped in bread, topped with braised collard greens and sesame seeds.

Chef Carter also highlights a grilled halibut collar served with a curry sauce from his aunt’s recipe, designed for an interactive eating experience. Desserts include a towering sweet potato pie, a chocolate Swiss roll, and peach cobbler, all crafted with guidance from pastry consultant Casey Doody.

Beverage Program and Ambiance

The beverage program focuses on women and minority-owned producers. Highlights include local beers, throwback cocktails like the Long Island iced tea, and nonalcoholic options featuring iced teas and homemade lemonade.

The restaurant’s design nods to Chicago’s character. Entry through chain-link fencing mimics a Chicago gangway, while the decor includes street and fine art with pieces significant to the local community and its history.

A Community-Centric Space

Soul & Smoke embraces its Evanston location, yet retains strong ties to Chicago. Authentic references and unique cultural elements enrich the dining experience. Outdoor seating features a mural inspired by neighborhood children, symbolizing nostalgia and joy. The aim is to share this sense of community with patrons, honoring the journey from humble beginnings in Chicago to their dream restaurant.

Reservation is available at the 175-seat restaurant, and the space incorporates artwork highlighting local history, including a mural depicting a Robinson bus.
