Osmel Gonzalez, a chef who left communist Cuba, is making culinary strides in South Florida. Within only four months of opening, his restaurant, Emelina, in West Palm Beach, has achieved a Michelin star. This award often takes chefs decades to earn.

For Gonzalez, this accomplishment highlights Cuban cuisine’s potential when not hindered by scarcity. He shared his excitement with Fox News Digital, describing the restaurant as modern yet respectful of traditional Cuban flavors. Named after his grandmother, Emelina celebrates Cuban roots while adding contemporary twists.

“We really love our traditions and our classic food,” Gonzalez stated.

Most ingredients come from South Florida, offering a unique dining narrative. Signature dishes include poached local oysters with yucca foam and cherry tomatoes with Cuban oregano chimichurri. According to the Michelin Guide, these dishes showcase the simplicity and elegance possible with local ingredients.

Gonzalez spent 22 years in Cuba, where decades of communist rule hindered culinary creativity. Cuban chefs, he said, often focus solely on acquiring food.

“Surviving is surviving,” Gonzalez remarked. “When you’re surviving, you cannot be creative.”

At Emelina, Gonzalez pursues what he calls an unattainable dream in Cuba by featuring beef, a luxury many Cubans lack. Despite the challenges, he aims to evoke nostalgia and creativity through the restaurant’s atmosphere and menu.

“Beef was never part of our menu in regular life,” Gonzalez explained. “Here we chose to present it in a way that we think we could have it in Cuba.”

Gonzalez’s efforts have paid off. Emelina stands as the first Cuban restaurant with a Michelin star, evoking memories for Cuban exiles and offering them a taste of pre-revolution Cuba.

Looking to the future, Gonzalez is optimistic about West Palm Beach’s dining scene and his restaurant’s role. He anticipates more chefs following his innovative path, contributing to the area’s culinary growth.
