Vilnius Hosts Vibrant Pink Soup Festival

In Vilnius, Lithuania’s capital, a festival dedicated to the beloved cold beet soup known as šaltibarščiai drew tens of thousands of visitors. The city, dressed in shades of pink, celebrated this iconic dish with enthusiasm during the three-day Vilnius Pink Soup Fest.

The festival featured a synchronized event called ‘Pink Break,’ where participants from around the world gathered for a shared meal of the beet soup. Attendees sat at long, communal tables, relishing the unique flavors of the dish. Organizers estimated that over three metric tons (6,614 lbs) of kefir, a fermented milk drink vital to the soup, would be consumed during the festival, along with more than 100,000 attendees.

Lithuanians enjoy this refreshing soup especially during the brief Baltic summer. Apart from beets and kefir, the soup includes boiled potatoes, eggs, cucumbers, and dill. The festival managed to draw an international audience. Among them was Connor Holmes from the United Kingdom, who discovered the event online and decided to attend, intrigued by the unique festivities.

Holmes expressed his excitement, saying, ‘Before I knew it, I was crafting a suit of pink knight armor, armed with a spoon rather than a sword, and decorating my shield with eggs, dill, and potatoes. Coming to Vilnius to witness this lively event felt like the next logical step.’

The city turned into a vibrant pink playground, with both tourists and locals dressing in pink outfits. Some even donned costumes themed around cucumbers, eggs, and beets. Celebrations extended into a colorful parade on land and on the Neris River.

Jolanta Žukienė, a local teacher, attended the festival for the fourth time with her family. She remarked, ‘I see more attractions and international visitors each year, making Vilnius a destination for those who appreciate culinary delights and unique experiences.’

Go Vilnius, the city’s development agency, orchestrated the festival as part of its strategy to boost tourism to Lithuania. Dovilė Aleksandravičienė, the agency’s director, humorously noted, ‘With the crowds by the riverbanks and creatively decorated boats, we joked that cold beet soup is taking over land and water. Perhaps, the air is next.’
