Many believe making a loaf of sourdough takes days, causing them to avoid trying it. However, Kate Freebairn, a sourdough recipe developer from rural Western Australia, wants to clarify this misconception. While sourdough can take three days to prepare, the active involvement is only about an hour.

Freebairn’s cookbook, Easy Sourdough on Any Schedule, illustrates how to integrate baking with everyday tasks. For someone working a standard schedule, Freebairn suggests easy integration. Feed the starter before bedtime, mix dough while having morning coffee, and check it during breakfast. Let it ferment during work hours, shape it in the evening, and refrigerate overnight. The following morning, bake it while making coffee.

Sourdough offers health benefits too. Being naturally fermented, sourdough includes microbes that aid digestion and reduce blood sugar spikes. Additionally, it contains prebiotics beneficial for gut health. Taste is another advantage, with many finding sourdough more flavorful.

No need for fancy equipment to begin. A starter can be kept in a pickle jar, and a regular bowl works for proofing. Freebairn herself uses an affordable Dutch oven from Aldi.

“There’s a lesson in every loaf,” Freebairn advises.

Beginners should exercise patience. Expect the first loaves to be imperfect; usually, it takes five to ten attempts to improve.
