Host Capri Cafaro reveals these insights in “America the Bountiful: America’s 250th Anniversary Special.” As the U.S. commemorates its 250th anniversary, the documentary highlights the resilient transformation of local crops, livestock, and wild game into a sustainable food system amid unreliable European imports.
“Food is a fascinating cultural anchor,” Cafaro shared with Fox News Digital. “It provides endless stories that connect to economics, agriculture, environment, and science.” Her exploration across colonial American landmarks traces the origins of key foods such as cheese and whiskey that shape today’s culinary landscape.
Colonial settlers were forced to adapt creatively to become food-independent from Great Britain, as revealed in the documentary.
During her journey, Cafaro noted how colonists cleverly converted milk into cheese to counter spoilage and utilized grain byproducts for alcohol production. The documentary features her sampling whiskey made authentically at George Washington’s Mount Vernon estate, humorously contrasting historical whiskey with modern tastes.
One challenging experience involved hunting and consuming small game, a staple in 18th- and 19th-century America, especially in Appalachia. Cafaro humorously remarked about potentially being a vegetarian during that era due to reliance on small prey like squirrels, which were favored by former presidents like James A. Garfield.
Cafaro’s findings reveal the diversification of crops, innovative preservation techniques, and versatile hunting methods employed by colonists. The documentary also examines the contributions of Indigenous peoples, European settlers, and enslaved individuals in food cultivation and preparation. Indigenous knowledge, such as making tea from local plants, evolved into Liberty Teas post-Boston Tea Party, symbolizing independence.
Cafaro was particularly impressed by the settlers’ innovative spirit, identifying it as a defining aspect of the American identity. Through the documentary, she aims to amplify the contributions of farmers, ranchers, fishers, and others involved in food production, underscoring their role in shaping the American identity.
